The snack, which consists of a crispy shell packed with potatoes, chickpeas, spices, or chilis, and flavored water, is known by various names such as puchka, gol gappa, and has numerous regional variations throughout the nation.

In Maharashtra and Andhra Pradesh, the bite-sized delicacy is typically comprised of boiled chickpeas, a mixture of white peas, and sprouts dipped in sour and spicy water. In Punjab, Haryana, Delhi, Uttar Pradesh, and other northern Indian states, the potato and chickpea-stuffed snack dipped in jaljeera-flavored water is known as gol gappa. This variety is known as puchkas or fuchkas in regions of West Bengal, Bihar, and Jharkhand, and its primary ingredient is tamarind pulp.

According to legend, the origins of the popular snack trace back to the epic Mahabharata, when Draupadi was tasked with feeding her five husbands with limited resources. With only some leftover potatoes and vegetables and a small amount of wheat dough, Draupadi created pani puri by stuffing tiny pieces of fried dough with the potato and vegetable mixture.
